But the good news is most store bought aioli is made from pasteurised eggs. Also, if you are at a restaurant and have ordered a dish that contains aioli, chances are it is made from pasteurised eggs. But if you are in doubt, go ahead and ask. If the serving staff seems unsure, then it is better to avoid it just then and order something else.
