What nutrients does scallop squash contain

Scallop squash contains a large dose of folate and niacin. Folate is necessary for healthy development of the fetus and helps prevent neural tube defects like spina bifida. It is also a good source of Vitamin C, that strengthens blood vessel walls, promotes wound healing and iron absorption, helps prevent atherosclerosis, and protects against cell damage by free radicals. Scallop squash also provides some beta carotenes that convert into Vitamin A and aid the development of the baby’s lungs, which helps prevent night blindness in the baby.
